Grünthal Microbrewery


Our onsite microbrewery houses an innovative “Braumeister” system that is ideal for extracting and maximising hop aromas. Our cellar consists of 6 fermenters that enable us to brew on demand and maintain peak freshness. We brew small batches often, and once chilled for packaging it stays chilled, favouring quality over quantity.       

Saul Sullivan, Udder Delights’ cheesemaker now turned brewer, comes from a background of quality through excellence and entrepreneurship. He possesses an astute palate and knows what he likes and can quickly detect if something isn’t as it should be and is affectionately known as the ‘fuss pot’. His leadership forms the basis of our simple brewing philosophy – to relentlessly pursue the production of Adelaide Hills craft beers where flavour and quality are king. 

He works closely with head brewer Kai Cook and together they brew beers that are true to style or description, not afraid to experiment while also honouring tradition. We source the finest brewing ingredients from all over the world and where possible use Australian produce as our first choice.

The result is our core range that includes a crisp lager; an easy-drinking session ale; an approachable pale ale; a smooth stout; a fruity XPA; a big, boozy double IPA; and a hazy NEIPA (New England IPA) that is fruity and mildly bitter.
